500 g Sweet Dough Ingredients:
150 ml milk 45 °C/8 ounces
10 g dried instant yeast (3 teaspoons)
500 g all-purpose flour/ or bread flour
170 g butter softened/ 8 ounces
90 g sugar/ 4 ounces
1/2 teaspoon salt
2 large eggs/ room temperature
1 lemon peel
Preparation:
Dough Preparation:
Warm your milk to 45 °C and combine with 1 Tablespoon sugar and your yeast to activate your yeast.
Put your flour in the mixing bowl with the milk/yeast mixture and stir until combined with the dough hook.
Add in your eggs one at a time, then the sugar, salt, and butter and mix until combined.
Mix on medium speed for 5–10 minutes until the dough pulls away from the side of the bowl and the dough bounces back when you touch it.
Proof in a warm area for 90 minutes, or until dough doubles in size.
Shape dough according to the recipe you are following.
Proof for another 60 minutes or cover with plastic wrap and place in the fridge overnight until you need to bake the bread.
Processing:
In a nonstick pan, heat sugar until it starts to caramelize. Stir to incorporate and then when the caramel is a nice amber color, add 170 g of the butter and stir to combine.
Add the apples and stir to coat, cooking for 5 minutes, remove from heat.
Arrange apples rounded side down in a high sided cake tin. Set aside.
Meanwhile, split dough in half, roll out each dough to 5 mm thick into a large rectangle. Spread each with butter.
Mix together brown sugar and cinnamon, sprinkle over butter evenly. Cut each dough rectangle into 4 even long pieces.
Start rolling one from the bottom to the top. Take the first roll and place it on top of the next strip, starting again on the bottom and rolling up right to the top, building on the first. Continue with the remaining strips until you have a giant cinnamon roll!
Place on top of the apples, cover, and let rise for 30 minutes.
Bake covered with foil in a 180 º C oven for 30 -40 minutes.
Remove and let cool for about 10 minutes.
Flip over onto a board, serve. Enjoy in bites!
NOTE: You can do without apples in this recipe if you only like cinnamon. Sugar that goes with the apples for caramelization, then you don't need it. All you require is brown sugar, cinnamon for sprinkling and melted butter!
