Kebab in Oven

  • Oven-baked kebabs offer a straightforward and efficient cooking method, eliminating the mess typically associated with pan frying by utilizing a baking sheet in the oven. This dish is perfect for family gatherings and celebrations, requiring only a few ingredients. The result is flavorful and delectable meat. These kebabs can be served alongside salads, baked potatoes, or other vegetables. Please review the NOTE in the section below before beginning preparation. Follow the recipe as directed.


Ingredients: simple, total time: 50 min. 3-4 serving
  • 1 kg mixed twice minced meat/ 70% beef, 30% lamb

  • 20 g of salt

  • 2 tsp white pepper

  • 3 garlic cloves/ minced

  • 1 onion/ finely chopped

  • 3 g of baking soda/1/2 tsp

  • 100 ml of water

Preparation:
  1. When preparing kebabs, ensure the meat contains 20% fat per kilogram, using cuts such as neck and back.

  2. Mince the meat twice for optimal texture.

  3. Place the minced meat in a bowl and incorporate the remaining ingredients.

  4. Thoroughly mix the meat for approximately 10–15 minutes until all ingredients are well combined.

  5. Cover the mixture with plastic wrap and refrigerate for 24 hours.

  6. After resting, stir the meat mixture once more.

  7. For shaping the kebabs, modify a plastic bottle to function as a funnel, using clean scissors and a flat round meat pestle to press the meat through the bottle’s neck. Cut each kebab to a length of 6 cm.

  8. To facilitate the process, oil the funnel where the meat will pass through.

  9. Arrange the kebabs to form either five or ten portions, as desired.

  10. Place the kebabs on oiled baking paper in a baking tray.

  11. Use a larger, thinner spatula to transfer them to the baking sheet. If they break, gently reassemble them.

  12. Lightly brush the kebabs with oil.

  13. Preheat the oven to 200 °C.

  14. Bake the kebabs for 15 minutes on the middle oven rack, then lower the temperature to 180 °C. Turn them over and bake for an additional 10–15 minutes until well browned.

  15. Serve with chopped fresh onions, salads, and either baked potatoes or purée.

NOTE:
  • Ground black pepper can be used as a substitute if white pepper is unavailable.

  • Ensure that the mixture contains 20% fat per 1 kg.

  • Kebabs can be prepared exclusively from beef minced meat.

  • Kebabs may also be prepared separately if that is more convenient.

  • If preferred, kebabs can be shaped manually.

  • They can be grilled as an alternative cooking method.

  • Store the remaining meat covered with foil in the refrigerator for 2–3 days.
