Pasta with Ricotta

## Delicious Ricotta Pasta Recipe
Quick and easy preparation of ricotta and pasta in just 15 minutes! You have a fantastic meal for three according to the original Italian recipe. Follow recipe.
Ingredients: simple, total time: 15 min., 3 serving
320 g pasta of your choice
300 g fresh ricotta
2 full Tbsp Parmesan/ or grated cheese
2 tsp olive oil EVO
3 Tbsp boiling water pasta
salt and black pepper to taste
mint leaves for decoration
Preparation:
Bring water and salt to a boil in a large saucepan, add pasta, and cook according to instructions.
Meanwhile, sieve the ricotta into a large bowl using a fine sieve, pressing it well with a spoon so that there are no lumps.
Then mix the ricotta with grated Parmesan, salt, pepper and 2 teaspoons of extra virgin olive oil by hand until you get a creamy mixture.
Finally, add 3 spoons of the boiling water in which the pasta was cooked to make a super velvety, soft and liquid cream.
Finally, drain the pasta al dente and pour it into the ricotta cream. Slowly add the pasta liquid to create a velvety mixture between the sauce and the pasta so that the pasta is spicy and creamy, neither liquid nor too compact!
Serve immediately hot with pepper and mint leaves:

NOTE:
You can freeze this cream in special boxes with a lid for up to a month.
With this cream, you can combine spinach, Swiss chard, bacon, and paprika.
You can also save it for baking or cannelloni or lasagna in combination with vegetables.
