Squid with Ginger Pumpkin Cream

  • Delicious soup prepared according to an Italian recipe, dietary and healthy taste of sea and pomegranate and lime. Ideal soup in summer and winter days. Follow recipe.

Ingredients: simple, total time: 40 min. 4 serving
  • 1 kg of cleaned squid

  • 600 g zucchini delicacy

  • 200 g of potatoes

  • 200 ml fish soup

  • 3/4 cm of fresh ginger

  • 1/2 lime peel

  • extra virgin olive oil

  • salt and pepper to taste

  • pomegranate to taste

  1. Peel a squash, grate it, and put the peel on the side. Bake the zucchini in the oven at 180 degrees for 30 minutes.

  2. Peel a potato, cut it into small pieces and put it in a pot with a little salt, and cook for 20–25 minutes.

  3. Combine the potatoes and pumpkin and add the zucchini peel with the broth, grated ginger and lime zest, oil and a little salt, and a little pepper.

  4. Peel a squid, cut it into strips, blanch in a pan with a little oil and a little salt for about 5–7 minutes.

  5. Spread cream and squid strips on plates and garnish with pomegranate seeds as desired.
