Lazy Pie

  • A traditional Serbian pie made by our grandmothers. My mom used to make it often during the week, precisely because it's easy to make! This cake is juicy and soft. It consists of apple filling and dough. It's a real treat when you eat it! Read the NOTE at the bottom of the chapter before preparing this cake. Preparing this cake is really simple and quick! Follow the recipe.

Ingredients: cup- 200 ml, simple, total time: 60 min. 24 cubes

Dough:

  • 3 eggs

  • 200 ml yogurt /1 cup

  • 200 ml of oil/ 1 cup

  • 200 ml of sugar/ 1 cup

  • 400 ml smooth flour 00/ 2 cup

  • 1 bag of baking powder/10 g

Filling:

  • 1 kg of grated apples

  • 2 Tablespoons of oil

  • 1 bag of bourbon vanilla sugar/10 g

  • 1/2 bag of cinnamon or sugar if desired/ if the apples are sour/

  • 2–3 Tablespoons of semolina/ if necessary,

  • powdered sugar for sprinkle

Preparation:

Filling:

  1. Pour a little oil into a saucepan and sauté the grated apples, sugar to taste, vanilla sugar and cinnamon. If the mixture is thin, add 2–3 tablespoons of semolina to get the thickness of the filling. Cook for about 15-20 min. on moderate heat. When it's done, put it aside to cool.

Dough:

  1. Beat the eggs and sugar in a deep bowl until you get a foamy and smooth mixture. Then add oil, yogurt and combine again.

  2. Finally, add sifted flour with baking powder. Mix until you get a homogeneous mixture. Divide the dough into two equal parts.

  3. Heat the oven to 200 °C.

  4. Grease the baking dish (butter, flour) and shake off the excess.

  5. Pour over 1/2 of the mixture dough and level it. Tap on the work surface to release the air from the mixture.

  6. Bake for 10 minutes, until the crust golden brown.

  7. After that, take out the baking dish, spread the filling, level it then pour over the other half of the mixture dough.

  8. Return the baking dish, reduce heat to 180 °C, bake for about 30-35 min. minutes, until golden brown.

  9. Check the cake with a toothpick. If it's dry, it's done!

  10. Cool the cake, then sprinkle with powdered sugar. Cut the pie into cubes and serve.

NOTE:

  • With this recipe, you can also combine nuts, hazelnuts, walnuts, almonds, with the fact that you have to reduce the amount of apples. Weigh them in advance and make the same weights as in the recipe.

  • As for fruit, you can also replace it with: cherries, ripe apricots, strawberries, raspberries, cranberries, or currants. First, just sprinkle them with sugar to taste, let them stand for 30 minutes then drain the juice. The dough must not be very wet.

  • If you are using frozen fruit, take it out of the freezer 1 day before, so that it can be thawed in time. You can also make gelatin from fruit if you prefer, but then it will last longer.
