Tartar Steak on Serbian Way

  • A detailed recipe for steak tartare with egg yolk and other ingredients which gave delicious flavor, This is how tartar steak ate our ex-president Tito in ex Yugoslavia, Original recipe from restaurant "Staro Zdanje” Novi Sad. Follow recipe.

Ingredients: medium, total time: 60 min.
  • 500 g beef tenderloin/ cleaned of fat and diced 5 mm

  • 1 egg yolk

  • 50 ml Olive Oil EVO

  • 1/2 lemon juice

  • 1 teaspoon mustard

  • 1 teaspoon red ground pepper

  • 2 shallots/ finely chopped and fried

  • 3 gherkins/ finely chopped

  • 3 capers/ finely chopped

  • 2 anchovies/ finely chopped

  • 1 Tablespoon fresh parsley/ finely chopped

  • 1/2 fresh hot pepper/ finely chopped

  • 1 Tablespoon Worcestershire sauce

  • 1 teaspoon Tabasco sauce

  • 50 ml French cognac

  • 1 teaspoon salt

  • 1 teaspoon black pepper

Decoration:

  • parsley/ for decoration -optional

  • sesame seeds/ for decoration-optional

  • 4 cabbage leaves for tartar steaks decoration/ optional

For serve:

  • butter for toast

  • 8 warm toast covered with kitchen towel

Preparation:
  1. Prepare all the ingredients as described above.

  2. Fry the chopped shallots in olive oil.

  3. Clean the steak of fat, that is, remove it. Then finely chop it into cubes of about 5 mm with a knife. Chop horizontally and vertically and crosswise with a knife.

  4. When the meat is well chopped and cut into smaller cubes, put it in a larger and glass salad bowl, make an indentation in the meat.

  5. Add egg yolks, oil, lemon juice, ketchup, mustard, mix everything well by hand (gloves) then add: fried shallots, gherkins, capers, anchovies, parsley, hot pepper, Tabasco sauce, Worcestershire sauce, french cognac, salt and black pepper.

  6. Stir it all well into a compact mixture.

  7. Form a steak tartare form if you have small disc molds, press, and turn and hand to each person on a plate, garnished with parsley leaves and sesame seeds. Place the steak tartare on the cabbage leaf.

  8. Cover the hot toast with a sheet of cloth and serve with butter.

  9. Spread butter on a baking toast and place the steak tartare on top of it.

NOTE: Consumption of raw meat is always at risk, only use fresh meat and eggs!

If you want, you can add finely chopped garlic to all that if you like, but it's not necessary!
