Perfect Black Risotto

  • When I want a real Dalmatian risotto, I always make it according to this recipe of mine and there is no chance that you will fail. It is very tasty and healthy, full of omega 3 and antioxidants. You will have on the table this mixture of these Mediterranean foods ready in 40 minutes. I highly recommend do it like me. Follow this recipe.

Ingredients: very easy, total time: 40 minutes, 2 persons
  • 1 onion, larger/ finely chopped

  • 3 cloves garlic/ finely chopped

  • 250 g of seafood mixture/ frozen packaging

  • 100 ml of white wine for cooking

  • 200 g Carnaroli rice or Arborio

  • 1 sachet ink of cuttlefish/ cut into rings

  • 300 ml of vegetable broth

  • 20 g butter

  • 1–2 Tablespoons fresh primrose/ finely chopped

  • salt and pepper to taste

  • 2-4 lemon slices for serving

Preparation:
  1. Finely chop the garlic and garlic.

  2. Put a small pot with 300 ml of water.

  3. Wait for it to boil, then add the vegetable cube for soup.

  4. In a deep-frying pan, put 2 tablespoons of olive oil and put the onion to simmer on a slightly moderate heat for up to 7–10 minutes.

  5. The onion must be nicely stewed because it will give you a nice density to this dish.

  6. Then add the seafood together with the garlic cloves finely chopped, let it simmer for about 10–15 minutes, stirring occasionally on moderate heat.

  7. Add white wine and let the alcohol evaporate. It is usually up to 5–6 minutes.

  8. When the alcohol has evaporated, add the rice and let it simmer for about 2 minutes, after add the hot vegetable soup, and let it simmer for about 7–10 minutes.

  9. Then add the ink of cuttlefish, mix well with adding water as needed, you will see the rice is it soft or hard.

  10. Rice must be Alla dente. Season to taste with salt and pepper.

  11. 5 minutes before the end, add butter and stir well.

  12. At the very end, add chopped fresh parsley, and stir.

  13. Serve warm in deeper plates with a slice of lemon. Buon appetito!
