Simple Puff Cookies

  • I love this recipe because it's very simple and quick to make, also there aren't many dishes to wash. You can make an extra treat with very few ingredients, so it's an economical recipe! Fantastic biscuits to go with tea or coffee. You all have these ingredients at home. My mom used to make it often. Follow recipe.

Ingredients: simple, total time: 35 min., 25 cookies
  • 2 eggs

  • pinch of salt

  • 90-100 g of sugar

  • vanilla sugar/ or aroma

  • 100 ml oil

  • 1 bag baking powder

  • 1/2 teaspoon baking soda

  • 300 g smooth flour

  • 50-60 g chocolate or coconut flour

  • to sprinkle finished cookies powdered sugar/ as desired-optional


Preparation:
  1. Mix eggs, sugar, vanilla aroma paste until frothy with a hand mixer. Then add: oil, flour, baking powder, baking soda, mix the ingredients well, then finally add chocolate flakes or coconut. Mix once more, well, with a spatula, then work with the hands well, until you get a uniform dough!

  2. After that, place the baking paper in the oven tray, form cookies as desired, stack them at a distance 2 cm.

  3. To make them puffy like mine, make them into first balls, then flatten the dough with your palms. Transfer it to baking paper and create a circle nice, the size of a ball like a Raffaello, maybe a little bigger than that, and the thickness should be about 6-7 mm.

  4. Bake in preheated oven, 80 °C, for about 10–15 minutes until they become golden brown. After 10 minutes, check the dough with a toothpick, if it's dry, it's done!

  5. Cool to room temperature, then serve. Sprinkle with powdered sugar as desired.

NOTE: You can add 1 lemon peel or orange peel, or coconut flour as an addition instead of chocolate flakes! If you want more dough, double the quantities. These cookies can last for days, stored in an airtight container!
