Muffins with Wild Berries and white Chocolate

  • Famous little muffins delicious with fruit and chocolate, a great combination, a very nice dessert is quickly made if someone comes to visit you. Follow recipe.

Ingredients: simple, total time: 60 min. 12 muffins
  • 100 g butter

  • 120 g sugar

  • 1 vanilla sugar/ 10 g

  • 2 eggs

  • 100 ml milk

  • 200 g flour (smooth)

  • 1/2 tsp baking powder

  • pinch of salt

  • 50-75 g hazelnuts

  • 50-100 g of frozen forest fruit

  • 50-100 g white chocolate for eating and cooking

Preparation:
  1. Add the melted butter to the sugar, vanilla sugar and mix by hand to combine the ingredients into a uniform mixture.

  2. Add eggs and milk and continue to mix to reconnect. It can be done without hazelnuts, (but if you cook like me with them, put the hazelnuts in the oven for about 12 minutes at 160 °C.)

  3. Peel hazelnuts, grate it and slice it. Add baking powder with a little salt to the flour and mix well.

  4. Now gradually add the flour to the wet mixture, mix at the same time until the muffin mixture is uniform and cohesive.

  5. Now add coarsely chopped hazelnuts to the muffin mixture, stir briefly, pour into the muffin basket, so that the level of the mixture is a little more than half.

  6. I have put a double muffin basket in each other.

  7. Over add wild berries, white chocolate and some more chopped hazelnuts and lightly pressed.

  8. Bake muffins for about 20–25 minutes at 190 °C, it all depends on how your oven bakes, so check the situation from time to time.

  9. When the muffins are baked, cool them briefly, take them out of the baskets and sprinkle with powdered sugar, but very little just enough to surface decorate your muffins.

  10. They are really delicious, and I hope you will prepare them one day. You will also be more than satisfied. The quantity in the recipe is for 12 muffins.
