Pumpkin Salad, Lena

  • Pumpkin is very healthy and in combination with other vegetables it gets even more effect. It is a source of alpha-linolenic acid (ALA), an omega-3 essential fatty acid that is very good for heart health. It lowers triglycerides and prevents changes in heart rhythm. ALA in the diet itself reduces the risk of heart and cardiovascular diseases. It contains vitamin A and vitamin C. It helps prevent the development of atherosclerosis. Here is a nice recipe for pumpkin salad. Follow recipe.

Ingredients: simple, total time: 20 min.
  • 10 lettuce leaves

  • 100 g of pumpkin

  • a few peeled pumpkin seeds

  • 100 ml of yogurt

  • 20 g Gorgonzola cheese

  • Olive oil EVO

  • a little fresh mint

  • salt to taste

Preparation:
  1. Chop the pumpkin into thin leaves. Sprinkle pumpkin leaves rolled in flour to get chips. If you don't want to use flour, it's not a problem, you can replace it with cornmeal or semolina. Prepare a dressing of yogurt, mint, oil and diced cheese. Fry briefly in olive oil. Combine with the green salad that you cut into noodles and sprinkle with pumpkin seeds. Buon appetito!
