Cinnamon Brioche

  • A beautiful dessert for any occasion, an ideal snack for breakfast with tea or white coffee. It is easy to prepare and ready quickly. Follow recipe.

Ingredientssimple, total time: 115 min.

Dough:

  • 375 g of flour

  • 7 g of instant dry yeast/ or 21 g fresh yeast

  • 25 g of sugar

  • 8 g of vanilla sugar

  • 5 g of salt

  • 180 ml of warm milk

  • 50 g of soft butter

  • 125 g of butter

Filling:

  • 100 g of sugar

  • 1 Tablespoon of ground cinnamon

  • Brush:

  • 1 egg

  • 1 Tbsp milk

  • 40 g melted butter

Preparation:
  1. In a bowl, combine dry ingredients: flour, baking powder, sugar and vanilla sugar. Stir well to blend.

  2. Also add the milk and butter, then mix with a wooden spoon.

  3. When the ingredients are well blended, knead with your hands until you get a smooth and homogeneous dough.

  4. Cover with plastic wrap and leaven for 45 minutes.

  5. Work the dough again, roll it out with a rolling pin into a rectangle.

  6. Spread half the surface with the butter, then fold the other half over it. Roll out with a rolling pin.

  7. Repeat the step 3 or 4 times.

  8. Brush the dough with a little water and sprinkle with a mix of sugar and cinnamon.

  9. Roll the dough into a loaf and divide into two equal parts.

  10. Rest in the fridge for 30 minutes, then cut the dough into 12 brioches.

  11. Using the handle of a wooden spoon, squash the brioche in the center.

  12. Brush the brioches first with a butter, then with beaten egg and milk.

  13. Bake in a preheated oven at 200 °C for 20 minutes. Serve warm. Enjoy in bites!
