Simple Lemon Biscuits

Fantastic quick lemon flavor cookies, without eggs, that are prepared very quickly. Simple and easy! Follow recipe.

Ingredients: simple, total time: 35 min. 16-18 biscuits
  • 120 g of butter/ room temp.

  • 50 g of powdered sugar

  • 150 g of flour

  • 20 ml of lemon juice

  • 1 big lemon grated rind

  1. Cut the butter that has been at room temperature into pieces and beat it with powdered sugar for about 3 minutes until it becomes creamy. After that, add lemon juice, lemon zest and flour gradually.

  2. When you have obtained a uniform dough, place the dough between two pieces of baking paper of the same size. Roll it out on the work surface with the help of a rolling pin, 5 mm thick.

  3. Put the developed dough in the refrigerator to cool for about 2 hours so that the dough hardens. Cooling is complete when you gently remove the paper from the dough.

  4. Place baking paper on an oven tray.

  5. Put the prepared dough on the work surface and use a round mold to cut out a 4-5 cm biscuit mold.

  6. Arrange on a baking tray. Bake at 170 °C, with fan for about 15–20 minutes, depend on oven.

  7. The biscuits must be crisp and soft.

  8. Place the finished biscuits in a deep bowl, cover with transparent foil, you can roll them in powdered sugar if you like.

NOTE: If you want a larger quantity, go for double amounts!

Store the cookies in a closed box for the next 4–5 days if there are any left :)
