Water Pastry-Turkish Way

  • Wet pastry phenomenal work Turkish recipe original, Burek pie with cheese. Try it yourself at home. You want to make your housemates happy and show them how great you are, make them this pie they will be delighted. This is a fantastic recipe! Follow instructions.

Ingredients: cup 200 ml, total time: 70 min. 10 serving

Dough:

  • 2 sheets thin crusts

  • 5 eggs

  • 100 ml of water

  • 1 teaspoon of salt

  • 4 cups of flour + 1 cup for

  • 1/2 cup of oil

  • 200 g of butter

  • 400 g salt cow cheese+ (parsley finely chopped if you like1 egg)

  • 1 teaspoon of salt and

  • 3 Tablespoon of oil

Preparation:

For the Dough:

  1. Mix eggs, add water. Gradually add flour and knead carefully. Knead the dough so that there are no lumps, then divide it into two equal parts. Roll the dough into equal rolls. 

  2. Cut into 12 equal parts. Make balls out of that dough and line them up in a tray, cover with plastic wrap, let them rest for 30 minutes.

  3. Meanwhile, mix the grated cheese, parsley and 1 egg for filling.

  4. When you have rolled out the 12 round dough, stack 4 pieces of round dough one on top of the other. Put a lot of flour in between them, and sprinkle the top, then roll it out with a rolling pin and put it aside. Repeat the rest dough the same.

  5. You should get 3 groups of dough. Roll each round of dough again with a rolling pin and flour it well, you should get bigger dough circles, set aside.

  6. After that, separate each part of the circular dough one piece at a time. Then use a rolling pin to roll out each piece of dough again and dust it with flour to make it even thinner. Be careful not to spread the dough too much and make holes. The dough should be about 1-2 mm transparent!

  7. When you have finished this part, prepare a pot of boiling water, put oil and salt. Pour cold water in a larger-deeper bowl where you will put the cooked dough. Carefully insert one dough not more than once, because they are large. Cook for about 1 minute, while it is cooking, carefully soak the dough from all sides with a spoon, then take it out of the hot water into a bowl of cold water. If necessary, change the cold water. Because there will be flour left after washing!

  8. Rinse well dough in cold water then place them in a large colander.

  9. Repeat this with the other test. Do not join dough to dough in cold water to prevent sticking.

  10. When you have finished all this, take a large tray from the oven, oil it well. Roll out 1 thin crust for baking. Layering the cooked dough does not have to be straight, it can be wrinkled. Pour melted butter and oil with a spoon on all sides, repeat this with each cooked dough and of course stack one on top of the other. If the dough has torn, it's not a problem, arrange it in pieces like a pie wrinkled. Repeat topping with each cooked dough with butter mixture.

  11. When you have reached level the third cooked dough, cover it again with the butter mixture then with cheese filling.

  12. Put the cooked dough again on top, pour the butter mixture over it. Then, fold the ends of the thin crust that you placed first inwards the dough and put another thin layer of crust on top of it, to cover the cooked dough. Join the edges and pour the butter mixture over the crust.

  13. Bake these pies at 180 °C until they get a nice and golden color.
