## Discover the Delight of Revani: A Traditional Greek Wet Cake

  • A wonderful Turkish dessert, Revani Lemon, an aromatic and moist cake topped with syrup. A very simple cake to prepare and quick, you can decorate it with coconut, pistachios and white chocolate. Follow recipe.

Ingredients: simple, total time: 55 min.

Dough:

  • 300 g semolina

  • 130 g flour

  • 1. 5 tsp baking powder

  • 4 large eggs

  • 200 g granulated sugar

  • 150 g Greek yogurt

  • 120 g melted butter

  • 1 lemon zest grated


Syrup:

  • 200 g granulated sugar

  • 450 ml water

  • 1/2 lemon juice

  • 1 cinnamon stick


For Decoration:

  • 80 g pistachios

  • 60 g coconut flour


Preparation:

Preparation Syrup:

  1. Pour sugar, water into a small saucepan and cook on low to moderate heat, add cinnamon, and 1/2 juice of lemon.

  2. When it starts to boil, reduce the heat and let it boil for about 10 minutes.

  3. Remove from heat and let cool at room temperature.

  4. Meanwhile, make the cake batter.


Preparation Dough:

  1. In a deep bowl, beat eggs with sugar until foamy.

  2. Add melted butter, yogurt and grated lemon zest.

  3. Add semolina, and mix briefly, then gradually add flour mixed with baking powder.

  4. Mix it all well into a uniform mixture.

  5. Grease (butter and flour) the baking dish, pour the mixture evenly and level it. Tap the bowl lightly on the work surface to release bubbles.

  6. Bake in a preheated oven at 175 °C for about 35–40 minutes. In case your oven burns hotter, place aluminum foil.

  7. Cool finished cake, covered with a clean cloth 15 minutes, cut into squares, then slowly pour cooled syrup over.

  8. Let rest more than 4 hours or overnight.
