Lemon Fluffy Pancakes

  • 1 egg

  • 50 g sugar

  • 50 ml seed oil

  • 150 g flour 00

  • 1/2 baking powder -for cakes/ 5 g

  • 1 lemon -juice and grated zest

  • peanut oil -for frying

  • granulated sugar -for topping

  1. The first thing you need to do is pour plenty of peanut oil for frying into a narrow, high-sided saucepan. Wait for the good oil to heat up while preparing the fluffy pancakes (The oil must not be too hot, otherwise it will burn immediately and will not cook well inside)

  2. Put the egg and sugar in a bowl.

  3. Stir with a hand whisk or fork.

  4. Add the seed oil and the juice with the grated lemon peel.

  5. Add the flour and baking powder to the egg cream and mix the dough again.

  6. With the help of a spoon, take small quantities of the pancake dough and dip it into hot oil.

  7. Swell and brown the lemon cakes by turning them on both side.

  8. Drain them with a slotted spoon and immediately pass them to the granulated sugar.
