Lemon Soft Cake

  • This juicy biscuit is easy to prepare and delights with its refreshing lemon flavor and juicy texture. Follow recipe.

Ingredients: simple, total time: 60 min.
  • 170 g butter

  • pinch of salt

  • grated rind of a large non-sprayed lemon or two smaller ones

  • 200 g of sugar

  • 4 eggs (medium size)

  • 260 g of smooth flour

  • on top of a teaspoon of baking powder (about 3 g)

  • 150 ml of milk

Topping:

  • juice of a freshly squeezed lemon

and

  • 2 Tablespoons powdered sugar

Preparation:
  • Preheat oven to 170 °C.

  1. Mix the softened butter with half the sugar, grated lemon zest, and salt and add the remaining half of the sugar, and mix until you get a uniform sparkling mixture.

  2. Add to the mixture alternately, one egg at a time and a few tablespoons of flour that you have previously mixed with baking powder, stirring constantly. Add the milk and mix everything well and pour into an oblong mold previously lined with baking paper.

  3. Bake the cake for about 45 minutes, depending on the strength of the oven.

  4. Check with a toothpick - it's done if it comes out dry when you stick it.

  5. Pour a topping of lemon juice and powdered sugar over the still-hot cake and leave it to cool.

  6. You can eat it lukewarm, and it will be just as juicy the next day.
