Muffin Projica with Cheese
Updated: Oct 20
Here is one of my favorite recipes for Proja corn bread muffins, a delightful and traditional dish that hails from the Balkans, particularly enjoyed in Serbia and surrounding regions. These muffins are not only exceptional in taste but also incredibly delicious, making them a perfect addition to any meal or a satisfying snack on their own. One of the best aspects of Proja is its simplicity; it requires minimal ingredients and can be prepared quickly, making it an excellent choice for busy individuals or families looking for a quick yet wholesome treat.
Ingredients
To make these delightful Proja corn bread muffins, you will need the following ingredients:
- 2 cups of cornmeal
- 1 cup of yogurt or buttermilk
- 2 large eggs
- 1 cup of water
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 cup of crumbled feta cheese (optional, but highly recommended for added flavor)
- 1/4 cup of vegetable oil or melted butter
- Fresh herbs like parsley or chives (optional, for garnish)
Instructions
1. Preheat the Oven: Start by preheating your oven to 400°F (200°C). This ensures that your muffins will bake evenly and develop a lovely golden crust.
2. Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, baking powder, baking soda, and salt. Stir these dry ingredients together until they are well blended. If you’re adding feta cheese, you can mix it in at this stage to distribute it evenly throughout the batter.
3. Combine Wet Ingredients: In a separate bowl, whisk together the yogurt (or buttermilk), eggs, water, and vegetable oil (or melted butter). Make sure these ingredients are well mixed, as they will provide moisture to the muffins.
4. Combine Mixtures: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. It’s important not to overmix the batter; a few lumps are perfectly fine. Overmixing can lead to denser muffins instead of the light and fluffy texture we desire.
5. Fill Muffin Tins: Grease your muffin tin or line it with muffin liners. Using a ladle or a measuring cup, fill each muffin cup about two-thirds full with the batter. This allows enough room for the muffins to rise without overflowing.
6. Bake: Place the muffin tin in the preheated oven and bake for approximately 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
7. Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack. These muffins can be enjoyed warm or at room temperature. You might choose to serve them with a pat of butter or a drizzle of honey for added sweetness.
Conclusion
I highly encourage you to try making these Proja corn bread muffins by following the recipe outlined above. They are not only a wonderful way to introduce a taste of Balkan cuisine into your kitchen but also a versatile dish that can complement a variety of meals, from hearty soups to fresh salads. Whether you’re hosting a gathering or simply looking for a quick snack, these muffins are sure to impress with their unique flavor and delightful texture. Enjoy the process of baking and savor the delicious results!
