Spring Chicken Dumpling Soup

  • You can replace or add vegetables such as kohlrabi, zucchini or peas, depending on the season, a beautiful and delicious soup that pleases you at any time. The soup should be in as many colors as possible with more vegetables, which gives it a better taste and more vitamins. Follow recipe.

Ingredients: easy, total time 40 min. 8 servings

For chicken balls:

  • 250 g minced white chicken meat

  • 1 egg

  • 3 Tablespoons grated Parmesan/ or other cheese

  • 3 Tablespoons pretzels/ or bread crumbs

  • pinch of salt and pepper

  • 1/2 tsp dry spice/ Vegeta

  • 1 teaspoon dry parsley

For vegetable soup:

  • 1 onion, finely chopped

  • 1 young garlic, finely chopped

  • 2 carrots, cut into rings

  • 1 parsnip, finely chopped

  • 30 g butter

  • 1 celery stalk, finely chopped

  • 1/8 celery root, finely chopped

  • 1 small fennel, chopped into hemispheres

  • 1 bunch of spinach, or chard, chopped

  • 1 Tbsp primrose

  • 1/2 Tbsp celery leaf, finely chopped

  • 1 piece of ginger to 1.5 cm or 1 tsp ginger powder

  • 1-2 Tablespoons oil

  • salt and pepper to taste

  • 1.4 liter of water

Preparation:
  1. First prepare all the vegetables as described above.

  2. Pour oil into the deep pot, add finely chopped onion, garlic and finely grate ginger. Fry briefly and add carrot, celery, and parsnips. When the vegetables are a little soft, add a butter. Simmer for about 3 minutes and stir. Fill everything with about 1.4 liter of water.

  3. Season with salt and pepper, cook covered on medium heat for about 15 minutes.

  4. While the soup is cooking, prepare the minced chicken dumplings.

  5. Put the minced chicken in a deeper bowl and add Parmesan, pretzels, egg, and season to taste with salt and pepper and mix the ingredients well into a homogeneous and compact mixture. If necessary, add breadcrumbs or Parmesan cheese as desired. Be careful not to make the mixture too dry. The firmer the mixture, the harder the dumplings will be. Then form balls / dumplings measuring 2.5 cm for the soup.

  6. After cooking the vegetables for 15 minutes, add the dumplings one by one to the soup. Cook everything together for another 10 minutes. 5 minutes before the end of cooking, add chopped spinach or chard. Turn off the heat, and add the chopped parsley and celery leaf.

  7. If you wish, you can add more grated Parmesan or some other cheese to the plate. Also, if you wish, you can cook some pasta or rice or add scrambled egg or sour cream.
