Zucchini Potato Pancake

  • Very tasty and irresistible pancakes made of potatoes and zucchini, with the addition of spice, it still gives it an irresistible smell and taste, it is easy to prepare and is an ideal meal for breakfast or dinner. Follow the recipe.

Ingredients: easy, total time 40 min. 4 persons
  • 2 eggs

  • 2 potatoes

  • 1 kg zucchini

  • 1 bunch of weed dill

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 4-5 full spoons of flour

  • vegetable oil for frying

Preparation:
  1. Grate zucchini and potatoes on a grater, add salt and pepper in a deep bowl, stir and let stand for 15–20 minutes. Meanwhile, chop the weed dill finely.

  2. When the zucchini and potatoes have dropped the juice, strain it all well, add eggs, finely chopped weed dill and flour, mix all well into a compact mixture.

  3. Heat the oil well at a moderately mild temperature and when it has become hot, add the mixture with a spoon and fry on both sides until golden brown.

  4. Place the toasts on kitchen paper to soak up excess fat. Serve them hot or cold with some spreads. This dish is great for breakfast or dinner.
