Fruit Cake with Strawberries Lena

  • A simple quick fruit juicy cake, refreshing over the summer, and the lids will always be happy. It does not take much time and is easy to prepare. Follow recipe.

Ingredients: simple, total time: 45 min.

Biscuit:

  • 5 eggs

  • 5 teaspoons of sugar

  • 5 Tablespoons flour

  • 1 Tablespoon oil

  First filling:

  • 1 liter of milk

  • 12 Tablespoons of sugar

  • 3.5 Tablespoons of flour

  • 2 bags of vanilla pudding/ 80 g

  • 2 vanilla sugars/ 20 g

  • 250 g of margarine

  • 2 Tablespoons powdered sugar

  Second filling:

  • 500 g of whipped cream

  • mineral water as needed

  Fruits:

  • 1–1.5 kg of strawberries

Preparation:
  1. Whisk solid egg whites with sugar, gradually add egg yolks, flour with baking powder, and a little oil. Transfer the dough to a greased and floured baking tray and bake in a preheated oven at 180 °C for about 20 minutes.

  2. Boil the milk. Then add 2 bags of vanilla sugar to the boiled milk and mix all the time with a hand mixer. Then add the vanilla pudding, whisk and allow cooling.

  3. Add margarine to the completely cooled filling, previously whipped with powdered sugar, and mix everything with a mixer.

  4. Whip the whipped cream with mineral water.

  5. Fill the cake in the following order: first crust, filling, strawberries, filling, second crust, whipped cream. Coat the whole cake with whipped cream. Refrigerate the cake for at least 2 hours! Serve. Buon appetito!
