Gluten-Free Baklava-according to a Turkish recipe. Follow recipe.
Ingredients: cup 200 ml, medium, total time: 120 min.
Syrup:
2 cups of granulated sugar/400 g
2 cups of water/ 400 ml
1 teaspoon of lemon juice
Dough:
7 Tbsp of milk
0.5 tea glasses of yogurt
0.5 tea glass of oil
1 egg
0.5 teaspoon of grape vinegar
1 pack of Gluten-Free Plain Flour Mix
To open:
1 cup of Gluten-Free Corn Starch
For between and above:
75 g melted butter
Inner material:
1 cup of coarsely crushed walnuts
Mold:
Rectangular mold (24×30 cm)
Preparation:
Preparation of syrup:
Put granulated sugar and water in a pot. Stir it over medium heat until the sugar dissolves and let it boil. When it starts to boil, add the lemon juice, turn down the heat and boil for 10 minutes. Remove from heat and let cool.
Preparation of the dough:
Put milk, yogurt, oil, egg, and vinegar in a deep bowl. Mix well with a hand whisk or fork. Add gluten-free plain flour and knead well. Cover it and let it sit for 10 minutes.
Styling and cooking:
Divide the dough into 24 equal parts.
Roll them in your hand, line them on the bench and cover them. Roll out each ball 12 cm in diameter on the bench, sprinkled with starch.
Put 6 dough on top of each other by sprinkling starch in between.
Then roll these 6 pieces of dough together and bring them to the size of the mold. Put it in the mold and apply butter to it.
Prepare the second 6 pieces of dough in the same way and put them into the mold. Spread butter on it and sprinkle with walnuts.
Roll out the remaining dough in the same way and place it in the mold by applying butter in between. Turn the oven on to the specified temperature and heat.
Top and bottom cooking: 180 °C. Turbo cooking: 170 °C
Cut the baklava in the mold into square slices with a knife. Spread the remaining butter on the baklava. Bake on the middle shelf of the oven.
Cooking time: Approximately 45–50 minutes
Let the baklava come out of the oven stand for 5 minutes and pour the cold syrup you have prepared on it. Let it sit for 2–3 hours and serve.
