## The Delightful World of Plumcake

  • I make this cake quite often according to my recipe and I never make a mistake regarding the quantity and ingredients. It is ideal for breakfast or dinner and a very economical and easy recipe. You will only need 15 minutes of preparation, and the rest is just for you to control. For this cake you will need eggs, sugar, flour, vanilla, cornstarch, baking powder, yogurt, and oil. These are important base ingredients. Follow recipe.

Ingredients: simple, total time 60 min.
  • 3 eggs

  • 1 egg yolk

  • 160 g granulated sugar: you can add more as you like 20-40 sugar

  • 250 g Greek yogurt

  • 90 ml oil

  • 50 g cornstarch

  • 1 bag vanilla sugar

  • 2 tsp vanilla natural a paste

  • 270 g flour

  • 1 bag baking powder / 12 g

  • baking mold 12×14 cm

Preparation:
  1. Beat eggs, egg yolk with sugar and vanilla sugar until foamy until the mixture becomes uniform and lighter.

  2. Add yogurt and beat briefly on medium speed.

  3. Add oil, vanilla paste and starch, mix again until uniform.

  4. At the end, add the gradually mixed flour with baking powder, mix it all well. Then mix gently a couple of times and put it aside. Heat the oven to 170 °C.

  5. Grease a 12×40 cm mold with butter and flour, including the sides up to the top.

  6. Pour the mixture evenly and tap a little on the work surface to pop the bubbles.

  7. When the oven is heated, put the cake to bake for 45–50 minutes.

  8. After 45 minutes, check the dough with a toothpick. Finished Plum cake, cover the with a clean cloth and let it cool.

  9. Carefully separate the cake from the mold with a thin knife, and turn it over.

  10. Then turn it carefully again. Knead and sprinkle with powdered sugar. (I never put sugar on plum cakes.)

  11. Serve for breakfast or dinner with tea or coffee, you can also with jam if you like.

NOTE:
  • I always put less sugar in the cakes, and it's sweet enough for me and when eaten or combined with jam, I don't think you need to overdo it. But if you really like it sweeter, try to add up to 40 g, no more.

  • If you want, you can add some raisins (50 g) or chocolate drops to this cake.

  • Keep the finished cake covered with a clean cloth in a box with a lid, that way it will be soft for a long time and will last longer.

  • If you want, while the cake is warm, you can pour a little milk over it with the help of a spoon.

  • Instead of regular yogurt, you can use coconut or almond milk, or white vanilla-flavored yogurt. I always add yogurt to cakes because it gives them elasticity and softness.

  • Instead of regular flour, you can also add almond flour.

  • Instead of oil, you can use the same amount of melted butter.
