Quail Soup

Ingredients: medium, total time: 80 min.
  • 2 liters of water

  • 2 quail carcasses

  • 360 g of potatoes/ diced

  • 1 cube for soup

  • 1 onion in piece

  • 1 parsnip/ finely chopped

  • 1 stalk celery/ finely chopped

  • 1 onion/ finely chopped

  • 1 larger carrot/ finely chopped

  • quail egg

  • 120 g wider noodles or thin noodles

  • salt to taste

  • 1 Tbsp parsley/ finely chopped

  • ground pepper to taste

  • 1-2 Tbsp green onion feathers/ finely chopped

  • 1 Tbsp olive oil EVO

  • 25 g butter

Preparation:
  1. Put the cleaned quail carcass in a deep pot, pour water and cook over a moderate heat.

  2. As soon as it boils, add salt, onion, parsnip, celery, and cube of soup. Cook for 30 minutes.

  3. After the time has elapsed, take out the onion and throw it away. Add the diced potatoes, cook the vegetables for about 10 minutes.

  4. Remove the quail meat and discard the skin, and put quail it back in the pot.

  5. Then you will make a classic carrot and onion soup. Fry the finely chopped carrots with the finely chopped onion in a pan with a little oil. As soon as the vegetables turn yellowish golden, add a butter and wait for it to melt, cook for about 2–3 minutes, after put them in the soup. Cook another 15–20 minutes.

  6. The final touch in the quail soup recipe are the thin noodles, without it the food will not be so nutritious and delicious.

  7. Put the noodles in the soup for 3–4 minutes before putting out the heat.

  8. When you put out the fire add fresh greens, cover with a lid 15–20 minutes will be enough.

  9. Finally, you can add boiled quail eggs if you wish.

  10. It's not necessary, but it's a nice culinary touch.

  11. Also, in the soup, it is desirable to put more fresh green onions and parsley.

  12. Serve the soup warm in plates, you can add 1 tablespoon to a plate of sour cream if you like.
