Serbian Gibanica Lena

  • Experience the exceptional taste of the finest Serbian pie made with aged cream and fresh cow's milk cheese. This delightful dish is simple to prepare and can be enjoyed either hot or cold, making it perfect for both breakfast and dinner. Follow the recipe for best results.

Ingredients: simple, total time: 50 min.
  • 500 g of thin bark

  • 300 g of cheese

  • 2 cups oil

  • 2 eggs

  • 1 cup sour cream or old cream

  • a little salt if the cheese is not salty

Preparation:
  1. Whisk the eggs with a small amount of sour water, then incorporate the oil, grated cheese, and sour cream, mixing thoroughly.

  2. Prepare a baking dish for the gibanica pie by greasing it with oil. Lay down one pastry sheet, brush it with oil, and then layer two crumpled sheets dipped in the filling. Spread an additional tablespoon of the filling over the sheets. Continue this layering process, alternating 1 + 2 sheets with filling, until all ingredients are used, ensuring the final sheet is uncoated except for a layer of oil.

  3. Bake the gibanica pie at a moderate temperature of 180 °C for 30–35 minutes. Serve warm, accompanied by yogurt or sour milk.

NOTE:
  • This is one method I use to prepare gibanica pie, and it is both straightforward and delectable.

  • For a less crunchy and softer pie, consider sprinkling a small amount of water or mineral water over the gibanica after baking.
