Fried Corn Biscuits, healthy recipe

  • If you have a little larger company coming, and you want to welcome them with something sweet, then I recommend this economic recipe, which is extremely quick to prepare and quick to eat. This recipe is an old recipe from our grandmothers, I can say that it is ancient. Mostly when there were shortages and hard times, our grandmothers prepared all kinds of biscuits that did not require a lot of ingredients and were ready quickly. I got this recipe from my mom, and she got it from my grandmother. I can tell you that it is fantastically crispy, crunchy, and delicious! It's great for everything that you don't have to spend a lot of time in the kitchen and at the same time it's healthier compared to the ones that contain a lot of ingredients and sugar. Corn fried biscuits that are quick and simply, instead of vanilla flavor you can use rum or hazelnut. Lemon zest does not fit in the original recipe! Follow recipe.

Ingredients: simple, standing time: 2 h, total time: 45 min., 50 biscuits
  • 100 g of corn meal

  • 50 g of potato starch

  • 150 g 00 flour

  • 60 g of sugar

  • 1/2 sachet of vanilla baking powder /24 g

  • about 300 ml water to taste

  • 150-200 ml corn oil or peanut oil for frying

  • powdered sugar to taste

Preparation:
  1. Mix all the powdered ingredients with a wooden spoon. Combine and gradually add water, mix with a wooden spoon to begin with, and after a certain amount of time, when the dough starts to come together, move on to mixing with your hands.

  2. Make the dough so that everything is smooth, compact and without lumps. The dough must resemble pizza dough.(When you poke the dough with your finger to leave an indentation).

  3. The process of making the dough takes a short time. Wrap the dough in cling film and let it rest in the fridge for about 1 hour.

  4. After the spinning time, put the dough on the work surface. Shape the dough into a thicker sausage or roll. Cut it into pieces 1 cm thickness.

  5. Roll each piece of dough into a long and narrow, thin wand 14 cm long, rubbing the dough with your fingers and roll. The dough is wonderful for shaping as you wish, you can do it in half moons as well. I cut it in half so that each stick was about 6–7 cm.

  6. Heat a lot of oil in a deep pan, on the slightly moderate heat.

  7. Insert your corn biscuits to fry until they get a slightly brownish color about 4–5 min., take them out with the help of a slotted spoon on a kitchen towel to absorb the rest of the fat.

  8. When they are all ready, sprinkle with powdered sugar and serve warm. Buon appetito!

NOTE: If you do not have a combination of vanilla and baking powder, then replace it with vanilla flavoring: in an 1 vanilla ampulla or 1 sachet of vanilla sugar and 2 sachets of baking powder, total 20 g. If you have leftovers for tomorrow, pack them in a glass box with a lid, and eat them until tomorrow because over time the dough will harden.
