Muffin Light with Orange and Lemon

  • Fantastic soft and delicious muffins with lemon and orange flavor, light variant does not contain even 90 calories. They are very easy to prepare, and you only need 35 minutes and the cake is ready. Follow recipe.

Ingredients: very easy, total time 35 min.
  • 300 g flour 00

  • 250 g light ricotta

  • 80 g stevia or 160 g sugar

  • 80 ml milk

  • 2 eggs + 2 yolks

  • 1 bag baking powder -7 gr.

  • 2 lemon peel/2 lemon juice

  • 2 orange peel/2 orange juice

  • powdered sugar

  1. Before starting this making, you should wash the lemon and orange well, because we will grate it.

  2. After that, when you have washed well, grate the lemon and orange peel, squeeze the lemon juice and orange juice.

  3. Filter the juice through a sieve.

  4. Put eggs and yolks, stevia or sugar in a deeper plastic bowl, mix well with a mixer until you get a compact foamy mixture.

  5. Then add the lemon and orange peel, as well as the juices and milk, mix again for 2 minutes, gradually add the baking powder mixed with the flour, mix the mixture well for 2–3 minutes until the mixture becomes thick and creamy.

  6. Take muffin tins and coat them with butter or oil.

  7. Then pour the muffin mixture, so that 1 finger is left in the mold.

  8. Bake the muffins in a preheated oven at 180 °C for 20–25 minutes, depending on the oven.

  9. Take the muffins off and let them cool, then sprinkle with powdered sugar.
