Pasta with Pumpkin Cream

  • Beautiful pumpkin cream and smoked bacon with pasta. You can choose the pasta which you like, it is very easy to prepare this dish, and it is ready quickly. Follow recipe.

Ingredients: very easy, total time: 40 min, 2 persons
  • 250 g pasta

  • 450 g pumpkin pulp, diced 1 cm

  • 50 g smoked bacon, chopped into thin sheets

  • 1 sprig rosemary

  • 130 ml vegetable broth

  • 40 ml extra virgin olive oil

  • 30 g cow's milk ricotta

  • 1 onion/ finely chopped

  • salt up to taste

  • black pepper to taste

  • 1/2 tsp thyme

Preparation:
  1. Take a pumpkin and cut it into large pieces, remove all the seeds and internal parts,

  2. Then cut into slices and remove the crust.

  3. Cut the slices into strips and then into cubes about 1 cm, also cut the smoked bacon into small strips and put everything in a bowl.

  4. Bring a pot of water to a boil over the pasta and salt with 1 tablespoon of salt.

  5. Meanwhile, pour the olive oil into a deeper pan and chop the onion finely.

  6. Add finely chopped onion to the pan and fry for a few minutes, stirring occasionally.

  7. When the onion has softened and turned yellow, add the chopped smoked bacon and fry the rosemary for a few minutes, season with salt and pepper.

  8. After 2 minutes, remove the rosemary from the pan and add the diced pumpkin, fry for a few minutes, then add the vegetable broth and cook for 20 minutes.

  9. When the water has boiled, add the pasta and cook according to the instructions alla dente.

  10. After the time has elapsed, take all the pumpkins out of the pan, put them in a blender and add the ricotta. Mix until you get a creamy mixture.

  11. Return the cream to the pan and stir.

  12. Strain the prepared pasta well, put it in a pan with pumpkin cream and mix well for 40 seconds. Sprinkle a little thyme over.

  13. Extinguish the fire and serve the pasta in plates. Buon appetito!

NOTE: You can combine the cream prepared in this way with tagliatelle pasta, macaroni, and gnocchi.
