Updated: Mar 11

  • Do you want to make something juicy and tasty? To looks good on the eye for festive occasions?! And you have no idea. I suggest this recipe and if you make it like me, you will not go wrong, I have prepared this dish for the New Year holidays and for my guests it was for all. The meat is best left to stand for one day, 24 hours when you smear it with all the spices and in the marinade, and only then do you put it to bake with potatoes. Follow recipe.

Ingredients: simple, total time: 150 min. 6 servings
  • A big piece of pork with skin

  • 1 kg potatoes

  • baking powder for baking pork

  • fat

  • 2 tsp each salt and pepper

  • 1 tsp dry spice Vegeta to taste

Preparation:
  1. Prick a piece of pork with skin with a sharp object, and cut the skin lengthwise into cubes. Also, on the other side, cut the meat a little.

  2. Then take the baking powder and sprinkle on the skin and rub it into the meat.

  3. Then rub evenly with it, take care that it enters the meat and do the same on the other side. So salted, put it in foil and let it stand for 24 hours.

  4. Remove the meat from the foil, cover it with a napkin to pick up a nice excess of water from the crust. Then coat with red ground pepper, pepper, and salt.

  5. Repeat the same procedure on the other side. Add a little salt again.

  6. Then take the lard, preferably the one from the bottom, which has small crumbs of greaves, and rub it into the meat on both sides.

  7. Then add a little more pepper and salt.

  8. Peel the potatoes and cut them into larger ribs.

  9. Put the wire in the pan and place the meat on the wire. Add water and lard in pan.

  10. Add a little more fat to the skin.

  11. Put to bake at the highest temperature, 250 °C.

  12. Bake for 35 minutes, turning occasionally.

  13. After 1 hour, take the meat out of the pan, put the potatoes in the fat that has accumulated in the pan and season the potatoes.

  14. Return the meat through them. Bake for another 30-40 min.

  15. Leave to cool and enjoy a fantastic lunch for the whole family.

Buon appetito!
