Spaghetti all'Amatriciana Lena

  • This is how I make this famous Italian specialty, and that is according to the original recipe. I eat spaghetti this way, not only because it's delicious, but also because it's done quickly. Follow recipe.

Ingredients: simple, total time: 30 min. 4 services
  • 800 g of peeled tomatoes

  • 400 g spaghetti

  • 200 gr pork cheek bacon

  • 1 Tbsp Olive oil EVO

  • pepper as needed

  • 1 chili pepper

  • pinch of sea salt

  • oregano to taste

  • fresh basil and dry basil

  • goat cheese Pecorino or Parmesan Cheese

  1. Peel bacon, and cut it into strips of about 1 cm. Then put them and chili pepper in piece in a pan with a little 1 tbsp olive oil. Add a little salt and pepper.

  2. Fry the bacon until it becomes transparent, then take them out with a large spoon with holes.

  3. Then add peeled tomato, basil oregano and cook on a medium fire with constant stirring.

  4. After 15–20 minutes return bacon to sauce, add the grated 1/2 tsp Pecorino or Parmesan cheese, and mix well when you get a nice and compact sauce, turn off the heat.

  5. Now prepare the spaghetti, make them all dents according to the instructions, when they are done drain them well and pour into a deeper wok pan with 1 tablespoon of water and mix the spaghetti well.

  6. Serve the spaghetti in a plate with the help of special spaghetti forks, twist them and decorate with one basil.
