  • I love spring rolls, whether they are filled with a medley of fresh vegetables or savory meat. These delightful treats are not only quick and easy to prepare, but they also offer a satisfying crunch and a burst of flavor with every bite. Spring rolls have become one of my favorite dishes to order at a Chinese restaurant, especially when I’m looking for a tasty appetizer to kick off my meal. The combination of crispy wrappers and flavorful fillings makes them an irresistible choice.


    Fortunately, I am in luck as there are several Chinese shops conveniently located in my area. I often find myself visiting these establishments at least once a month, indulging in the rich variety of dishes they offer. Each visit is a culinary adventure, as I explore different flavors and textures that Chinese cuisine has to offer. One of the aspects I appreciate most about Chinese food is its ability to taste delicious without leaving me feeling overly full or bloated afterward. The balance of ingredients and the use of fresh produce contribute to meals that are satisfying yet light.


    Today, I am excited to share that I will be making my own version of Chinese rolls, specifically filled with ground beef and carrots. This combination not only provides a hearty and flavorful filling but also adds a touch of sweetness and crunch from the carrots. These delicious rolls can easily serve as an appetizer to whet the appetite or can be enjoyed as a main dish, depending on how many you choose to make.

Recipe for Chinese Spring Rolls with Ground Beef and Carrots
Ingredients:

- 1 pound of ground beef

- 2 cups of finely shredded carrots

- 1 cup of cabbage, finely chopped

- 2 cloves of garlic, minced

- 1 tablespoon of soy sauce

- 1 teaspoon of sesame oil

- Spring roll wrappers

- Oil for frying


Instructions:

1. Prepare the Filling: In a large skillet over medium heat, add the ground beef and cook until browned. Drain any excess fat. Add in the minced garlic, shredded carrots, and chopped cabbage. Stir in the soy sauce and sesame oil, cooking for an additional 5 minutes until the vegetables are tender. Remove from heat and let cool slightly.


2. Assemble the Rolls: Take a spring roll wrapper and lay it flat on a clean surface. Place a spoonful of the beef and vegetable mixture on the wrapper, then fold the sides over the filling and roll it tightly from the bottom up. Seal the edge with a little water to ensure it stays closed during frying.


3. Fry the Rolls: Heat oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the spring rolls, frying them in batches until they are golden brown and crispy, about 3-4 minutes per side. Remove and place on paper towels to absorb any excess oil.


4. Serve: These spring rolls can be served hot with your favorite dipping sauce, such as sweet and sour sauce or soy sauce. They make for a perfect appetizer or can be enjoyed as a main course alongside rice or noodles.

Ingredients: simple, total time: 55 min. 10-12 serving
  • 600 g ground beef

  • 350 g carrots/ finely chopped

  • 100 g Bihon - rice noodles - soaked in warm water

  • 1 medium onion/ finely chopped

  • 1 Tbsp cloves of garlic/ minced

  • 2 Tbsp soy sauce

  • 1 tsp ground black pepper

  • salt to taste

  • 20-33 pieces spring roll wrappers - 21 cm

Preparation:
  1. Soak Bihon rice noodles in warm water.

  2. In a super chopper, chop the peeled and chopped carrots into small cubes.

  3. Heat a little oil in a pan and add the chopped onion.

  4. When it has softened, add the chopped carrots, mix well and stew for about 5-6 minutes.

  5. Add minced meat - mix well, season to taste: salt, pepper, add a minced garlic, and little soy sauce.

  6. Cover the pan and simmer more for about 3 minutes.

  7. Add drained Bihon noodle and mix everything well. Stew for another 10 - 15 minutes.

  8. Cool the filling completely.

  9. Prepare the spring rolls and pour 2 spoons of filling on each.

  10. Roll the spring roll half way, then tuck sides in like when making a letter, smear the edge with water and wrap it in a roll to the end. Set aside.

  11. Repeat until all material is used up.

  12. When you have finished all, heat the oil in a pan, fry the rolls until they are golden brown on all sides. You can also do this in the deep fryer.

  13. Put the finished rolls on a plate lined with kitchen paper to absorb excess fat.

  14. Serve warm with sweet and sour sauce.

NOTE:
  • If you like spicy ingredients, you can add them to the filling, or use hot sauce for topping.

  • Cover the remaining rolls and refrigerate for up to 2 days. Reheat in a frying pan or microwave.
