## Indulgent Creamy Broccoli and Gnocchi Delight

  • Indulge in a Mediterranean-inspired meal with Creamy Broccoli and Gnocchi. This dish is straightforward, light, and exceptionally flavorful, making it a perfect option for lunch. With my recipe, you can have lunch ready in just 30 minutes. Follow the recipe.

Creamy Broccoli with Gnocchi 
Ingredients: simple, total time:30 min., 2 servings
  • 250 g gnocchi + water for gnocchi

  • 2 Tbsp Olive oil EVO

  • 1/2 head broccoli/ separate into small florets

  • pinch of salt

  • black pepper to taste

  • 50 g bacon/ diced

  • 1 clove of garlic/ minced

  • 2-3 Tbsp Philadelphia

  • 250 ml vegetable broth/ 1/2 cube of soup and water

  • 1 Tbsp Parmesan cheese

Preparation:

Preparation Broccoli:

  1. The first thing you will do is wash the broccoli well, remove the stem and separate the florets into smaller florets, save the leaves, set aside.

  2. Pour enough water into the pot and add a little salt.

  3. When it boils, cook the broccoli with leaves on a moderate heat for about 5 minutes.

  4. Strain them immediately and set aside. Make the gnocchi last 10 minutes when you make a sauce.


Gnocchi:

  1. Add the pot with water for gnocchi and wait for it to boil. Cook according to package directions, it is about 3 minutes generally, as soon as they float to the surface, leave them for 20 seconds and take them out.

  2. Strain them well and put them aside. Do this at the same time as you make the gnocchi sauce.


Sauce if Broccoli:

  1. Pour olive oil into a large pan. In the meantime, cut the bacon into small cubes, chop the garlic.

  2. Add water for the broth, even better if you have bought ready-made. As soon as it boils, add one 1/2 soup cube, when it is absorbed set aside.

  3. Add the chopped bacon with a little olive oil to the pan — fry until it becomes crispy at low to moderate heat, stirring occasionally.

  4. Now add minced garlic, as soon as it smells, add broccoli with leaves, mix everything well.

  5. Fry for 2–3 minutes, then pour 1/2 of the broth, and stir.

  6. Season with black pepper and pinch of salt. You don't need to add too much salt, because the broth, bacon, and Parmesan are already salty!

  7. Mix the rest of the broth with Philadelphia without lumps and immediately pour over the ingredients, stir everything well again. Let it simmer for about 7–10 minutes, to low moderate heat.

  8. The sauce must thicken and reduce by about half the amount of liquid.

  9. Immediately add the 1 spoon of Parmesan cheese, and strained gnocchi, stir well for about a 1–2 minutes, and turn off the heat.

  10. Serve immediately warm, with grated Parmesan cheese added.

NOTE:
  • Instead of Philadelphia, you can also use ricotta or sour cream.

  • For 4 servings, duplicate the groceries.
