Kunefe-Turkish Dessert

Ingredients: cup 200 ml., round mold 26 cm, simple, total time: 20 min.

For Kadayif:

  • 300 g kadaif

  • 150 g of melted butter

Filling:

  • 250 g string cheese or mozzarella

  • 1.5 cups granulated sugar

  • 1.5 glasses of water

  • 1 slice of lemon

  • a few drops of lemon juice

For the above:

  • 2 Tablespoons of crushed pistachios

Preparation:
  1. Grate the cheese. Pour cold water on it, let it sit for 5 minutes, and strain the water. Repeat this process several times until the cheese comes out of salt. If it is mozzarella, then there is no need for that.

  2. Grease the mold with butter.

  3. Set the oven to the specified temperature and wait for it to heat up.

  4. Top and bottom cooking: 180 °C. Turbo cooking: 170 °C.

Preparation of kadayifs:

  1. Cut the kadayıf into 1 cm length with a sharp knife, place it on a large tray.

  2. Pour the butter over it. Make sure that the oil is evenly distributed on all sides of the kadayıf by stirring it with your hand from bottom to top without crushing. Take the half into the mold and press it with your hand and spread it on the base.

  3. Spread the grated cheese on it. Press the remaining kadayif on the cheese with your hand and cook.

  4. Cooking time: Approximately 30–35 minutes.

Preparation of Syrup:

  1. While the künefe is being cooked in the oven, prepare the syrup.

  2. Put granulated sugar and water in a saucepan and bring to a boil by mixing over medium heat. When it starts to boil, turn down the stove. Boil another 5 minutes and remove from heat. Take the cooked künefe out of the oven and pour the syrup on it without waiting.

  3. Sprinkle with pistachios. Serve hot by slicing. Buon appetito!
