Ingredients:

- 400 grams of spaghetti

- 2 cans of sardines in olive oil (preferably sustainably sourced)

- 4 cloves of garlic, minced

- 1 small onion, finely chopped

- 1 teaspoon of red pepper flakes (adjust to taste)

- 1 tablespoon of capers, rinsed and drained

- Fresh parsley, chopped (for garnish)

- Salt and black pepper, to taste

- Zest and juice of 1 lemon

- Extra virgin olive oil, for drizzling


Instructions:
  1. Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about a cup of the pasta water before draining the spaghetti.


  1. Prepare the Sauce: While the pasta is cooking, heat a generous amount of olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, sautéing until they become fragrant and translucent. This should take about 3-4 minutes.


  1. Add Sardines: Gently add the sardines to the skillet, breaking them up slightly with a wooden spoon. Incorporate the red pepper flakes and capers, allowing the flavors to meld together for about 2-3 minutes.


  1. Combine Pasta and Sauce: Once the spaghetti is cooked and drained, add it directly to the skillet with the sardine mixture. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

  • 240 g of spaghetti pasta

  • 240 g of fresh sardines

  • 30 g of dry raisins/ bath in water

  • 30 g of pine nuts

  • 2 desalted anchovy fillets

  • 1 onion/ finely chopped

  • 3 bunches of wild fennel/ finely chopped

  • 1 clove of garlic/ minced

  • a bunch of parsley/ or 2 tsp dry parsley

  • 1/2 sachet of saffron powder/ 0.15 g

  • pinch of flour/ for dipping sardines as you like

  • extra virgin olive oil

  • salt and pepper to taste

Preparation:
  1. Bring the water to a boil for spaghetti and add a little salt.

  2. Soak the raisins in a little water.

  3. Prepare fresh sardines, clean them from the head and then cut them under the stomach to look like a leaf, peel them, season with a little salt and roll them in flour and set aside.

  4. Divide the sardines into two parts, one goes for frying, the other for stewing!

  5. Take a frying pan, heat the oil, then fry one part of the sardines in hot oil, place them on a plate on the side.

  6. In the same pan, heat 2 tablespoons of oil, add finely chopped garlic, place the remaining sardines on them, pour over 100 ml of water, cook for 10 minutes.

  7. Then add saffron dissolved in a little water, chopped parsley, salt, and pepper to taste, mix so that the sardines do not fall apart, do not press! Cook them for another 7 minutes, set them aside.

  8. In another pan, sauté the onion with 3 spoon of oil, add 100 ml of water. Then add raisins well squeezed, pine nuts, chopped wild fennel, anchovy fillets, cook for about 10 minutes on low moderate heat.

  9. When spaghetti are ready, strain them well then transfer them to a pan with saffron and sardines, grease them a little with olive oil, stir.

  10. Arrange layers of pasta alternately with layers of fried sardine sauce and onions, raisins and pine nuts in the oven dish, and finally sprinkle with chopped fresh parsley.

  11. Put to bake at 180 °C, for 15 minutes.

  12. Remove the dough from the oven and serve warm.
