Stewed Kale Simple Way

  • Now is the time for kale, and you should consume it as much as possible! It is full of vitamins and minerals C, A and K. It is very important for bone health, calms inflammation, protects the heart, it is good for eyesight and reduces the risk of cancer. In this way of preparation, you can serve it with any kind of meat and fish or with eggs if you are not a fan of meat. You don't need a lot of knowledge in this recipe, it's very simple to prepare. Ingredients: simple, total time: 50 minutes, 4 servings
  • 1 small head of kale / diced

  • 1 onion /finely chopped

  • 1 carrot / finely chopped or cut into thin rings

  • 1 medium potato / cut into smaller cubes

  • 3 cloves of garlic/chopped

  • 1 teaspoon of dry spice-Vegeta

  • salt and pepper to taste

  • 2 Tablespoons of oil

  • 2 cups of water/400 ml

Preparation:
  1. Wash all the vegetables well and prepare all as described above.

  2. You will need a larger, deeper pan.

  3. Put the finely chopped onion and carrot together, let it simmer bout 5 minutes in the oil. When the onion has become glassy and soft, add a 1 teaspoon of dry spice-Vegeta, mix well.

  4. While stewing, stir constantly. It should be stewed for about 10 minutes in total.

  5. After the specified time, add the chopped potatoes, mix the ingredients and simmer for about 5 minutes with occasional stirring.

  6. Immediately after that, add the diced kale, add 1 cup of water and mix the ingredients well.

  7. Cover the pan and let the vegetables simmer for about 10–15 minutes.

  8. When the water has almost evaporated, add another cup of water, salt, and pepper to taste, stir and cover the pan again. Simmer with occasional stirring for 10-15 min.

  9. The vegetables must be soft but not overcooked! Do not forget that long cooking kills all the vitamins of these vegetables, so be practical.

  10. Towards the end, add 3 cloves of finely chopped garlic, mix well and cook for another 3–5 minutes, no more. The stew is then ready. You can serve this stew with chicken or any other meat you like.
