Corn Fritters with Cheese

  • Crispy corn fritters stuffed with corn kernels, Edam cheese and spices, all cooked together to a golden brown perfection. A very simple side dish that is perfect at any time. Follow recipe.

Ingredients: cup 240 ml, very easy, total time 35 min., 6 persons
  • 3 cups corn kernels fresh, thawed from frozen, or canned/ 500 g

  • 1 cup all-purpose flour/ or 120 g

  • 1 tsp granulated sugar

  • 1 tsp baking powder

  • 1 tsp salt

  • 1/4 tsp pepper

  • 2 eggs

  • 1/2 cup whole milk

  • 1/3 cup green onions thinly sliced/35 g

  • 1/2 cup shredded Edam cheese/80 g

  • vegetable oil for frying

  • Toppings such as sour cream, sliced green onions and crumbled bacon optional

Preparation:
  1. Heat 1/2 cm of oil in a deep-frying pan over medium heat.

  2. Put corn kernels, flour, sugar, baking powder, salt and pepper in a large bowl.

  3. Stir to combine.

  4. Add eggs and milk.

  5. Stir until a thick dough is formed.

  6. Add the green onions and cheddar cheese and stir gently to combine.

  7. Put 2 tablespoons of the fritters' mixture in the pan, then flatten them.

  8. Bake the fritters for about 3 minutes on the side, until they become golden brown and crispy.

  9. Repeat the procedure with any remaining test.

  10. Add the topping you want, and serve immediately.

  • 130 ml or 1/2 cup vegetable oil

  • 500 g / or 3 cup corn fresh or canned

  • 210 g /or 1 and 1/2 cups flour

  • 2 Tbsp corn flour

  • 2 tsp baking powder

  • 1 tsp salt

  •  1/2 tsp red ground paprika

  • 3 Tbsp chopped green onion

  • 115 ml / or 1/2 cup whole milk

  • 2 eggs

Preparation:
  1. Pour the oil into the pan to heat over a medium heat while you prepare the mixture for baking.

  2. In a deep bowl, mix the cornstarch, cornflour flour, baking powder, paprika, green onions, milk, and egg. The mixture must be compact and uniform.

  3. Slowly add the mixture with a spoon or cup, fry on both sides, until well browned to a golden color, for 3–4 minutes on medium heat.

  4. Pull them out onto a plate lined with kitchen paper to soak up the fat wax.

  5. Serve warm with some side dish or meat.
