  • Bake twice and divide the mixture in 1/2- you have to get 4 crusts in total.

Filling:

  • 12 yolks

  • 150 g of sugar

  • 150 g of cooking chocolate

  • 250 g butter

  • 50 ml aroma rum or rum liqueur

Chocolate glaze:

  • 150 g of cooking chocolate

  • 60 g butter

  • For decoration, 150 g walnuts coarsely grounded and finely ground or Hazelnuts

Preparation:

Crust:

  1. Stir in the egg whites and gradually add sugar, stir until you get a foamy, firm and homogeneous mixture.

  2. Then add the ground walnuts and whisk with a spatula.

  3. In a baking tray in which you will bake, line the crust with baked paper and bake at 180 °C for about 20 minutes, depending on the oven.

  4. Repeat the same with the other part of the mixture, you will divide them later, you need to add a total of 4 crusts.

  5. Once you have done the crust, you can save the filling.

Filling:

  1. Whisk in the frothy egg yolks and sugar, then switch to steaming for about 20 minutes, stirring constantly, depending on the boiling water.

  2. While the mixture is hot, add the crushed chocolate and stir until you get a uniform mixture.

  3. Then leave the filling to cool for 7-8 min.

  4. Put the butter that was at room temperature in a bowl and stir until you get a smooth mass. Add only 1 tablespoon of the filling and continue mixing, then add the aroma of rum and mix again.

  5. Then gradually add spoon by spoon of the filling and stir constantly, until you get a completely uniform mixture of the filling.

  6. After that, you can fill the crust and decorate the cake as desired. I used chocolate glaze here, and I have sprinkled coarsely ground walnuts and finely ground walnuts as decoration.

Chocolate glaze:

  1. Melt the steamed chocolate and add the butter, and mix into an even glaze. Then pour over the cake and flatten the icing with a cake knife. Put the cake in the refrigerator to cool for about 30 minutes, then make a decoration with walnuts. Leave the cake to cool completely for 2–3 hours, maybe better 24 h, then serve! Buon appetito!
