Updated: Oct 23
This is one of the ways Serbs prepare sauerkraut, a dish that holds a significant place in our culinary traditions. Sauerkraut, fermented cabbage, is not just a staple food; it is a symbol of comfort and home-cooked meals, often associated with family gatherings and festive occasions. The process of making sauerkraut is steeped in history, reflecting the agricultural practices and preservation methods of the region.
If you enjoy the delightful taste of sauerkraut baked in the oven, then you are in for a treat with this particular recipe. This version of baked sauerkraut is not only incredibly flavorful but also remarkably simple to prepare, making it an ideal choice for both novice cooks and seasoned chefs alike. The combination of ingredients melds beautifully in the oven, creating a dish that is rich in flavor and texture.
To begin, gather all the necessary ingredients, which typically include sauerkraut, various spices, meats such as pork or sausages, onions, and perhaps a touch of smoked paprika for an added depth of flavor. The layering of these components is crucial, as each element contributes to the overall taste profile of the dish.
Once you have everything ready, you will want to preheat your oven to the appropriate temperature, which allows the flavors to develop fully as they cook together. The preparation involves sautéing the onions until they become translucent and fragrant, followed by mixing in the sauerkraut and any chosen meats. This mixture is then placed in a baking dish, often topped with additional spices or herbs to enhance the aroma and flavor during the baking process.
As the dish bakes, the aroma will fill your kitchen, inviting everyone to gather around the table in anticipation of a hearty meal. The final result is a beautifully baked sauerkraut that is not only satisfying to the palate but also visually appealing.

150 g of dried bacon
1 large onion
4 cloves of garlic

In a greased pan with oil, place half of the sauerkraut, followed by the meat, cured meat, chopped onion, garlic, bay leaf, and peppercorns.
Layer the remaining cabbage on top, add ground paprika, olive oil, and a small amount of water. Gently stir with a fork to ensure even distribution.
