Strudel Lena

  • This is my mom's recipe according to which I always make strudels, and they are always great and taste good. The dough is famously soft, and the crust is fantastic for this cake, you must try it. It takes a little more time, but it's worth it! Follow recipe.

Ingredients: simple, total time: 150 min.

Dough:

  • 700-800 g flour

  • 1 cube of yeast/ 42 g

  • 300 ml milk

  • 1 whole egg

  • 2 yolks

  • 1 grated lemon peel

  • 1 vanilla sugar/ 10 g

  • 100 ml oil

  • 1 teaspoon of salt

  • 4-5 teaspoons sugar

For Poppy stuffing:

  • 6 Tablespoons sugar

  • a little milk, 100 ml optional

  • 600 g of poppy seeds or walnuts

  • 100 g raisins

Preparation:

Dough:

  1. Stir the yeast in lukewarm milk, add a teaspoon of sugar, a little flour, leave in a warm place for the yeast to rise for 15 minutes.

  2. Meanwhile, whisk 2 egg yolks, 1 egg, 1 grated lemon, vanilla sugar with 4 tablespoons of sugar. Then add oil, pinch of salt mix well again then gradually add the flour (spoon by spoon), then add the raising yeast with the milk.

  3. Knead the dough softly, set aside and cover with a cloth or foil in a warm place. Let it rise for 40 minutes.

  4. When the dough has risen, a little roll-out the dough with a rolling pin, then briefly let it rise again for 15 + 20 min. In the meantime, you will prepare the filling.

Fill:

  1. Heat a cup of milk well, add 6 tablespoons of sugar and 600 g of poppy seeds, stirring constantly for a for 5–10 minutes. Add the washed raisins.

  2. Form the dough, make 2 noodles and roll out the dough into rectangular form.

  3. Divide the filling and spread to the dough (the thickness of the dough must be about 1 cm), roll it up and put it in a greased pan, let it rise a bit.

  4. Do the same with other dough. Bake at 180 °C, 30-40 min. Depending on the oven.

  5. You can coat the strudel from above with one egg. It will make a nicer color.

NOTE: If you are making with walnuts then you will need the following for the filling

  • 600 g of ground walnuts

  • 5 Tablespoons of sugar

  • 1 bag vanilla sugar/ 10 g

  • a milk or water, 100 ml- as needed more

  • Grind the walnuts well. Put them in a deeper pan. Pour water or milk, add 5 tablespoons of sugar, add vanilla sugar, stir well until you get a thick mixture, then turn off the heat and leave the filling to cool a bit.
