London Bars by My Mum

  • This recipe is quite old, and I have kept it in my book for years. By the way, I adore this dessert, it is wonderful, mixed with the flavors of walnut jam and good dough. Phenomenal. My mom always makes it on New Year's Eve or Christmas, especially for her grandchildren. I recommend the recipe to anyone who likes a good bite. Follow recipe.

Ingredients: baking tray 20x20 cm, simple, total time: 60 min.

The Crust:

  • 100 g of butter

  • 200 g of flour

  • 3 egg yolks

  • 2 Tablespoons sugar

  • a little salt

  • a little baking powder/ 1 teaspoon

  • 1 Tablespoon cream

Stuffing:

  • 3 egg whites

  • 200 g of ground walnuts or almonds

  • 150 g of sugar

  • 3 chocolate ribs

  • 1 bag vanilla sugar/ 10 g

  • grated lemon zest,

  • a little rum

  • 3 Tablespoons apricot jam

  • 100 g of coarsely chopped walnuts

Preparation:
  1. Knead all the ingredients for the crust and leave it in the fridge to rest for 30 minutes.

  2. After that, roll out the dough and put it in a tray (previously greased or lined with baking paper), spread it with jam, mix it well beforehand for easier application.

  3. For the filling, mix the egg whites and add ground walnuts, sugar, melted chocolate, vanilla sugar, a little rum and grated lemon zest. Apply the resulting mixture on the dough.

  4. Cut 100 g of walnuts (or almonds) into larger pieces and sprinkle on a stake and place in a preheated oven at 180 C for about 20 minutes.

  5. Cut the cake into smaller rectangles.

2. Recipe London Bars

18 × 28 cm baking tray, simple, total time: 60 min.

Ingredients:
  • 400 g of flour

  • 250 g of butter

  • 150 g of sugar + 200 g of sugar

  • 20 g of vanilla sugar

  • 5 eggs/ separated yolks and whites

  • 5 g of baking powder

  • 150 g of ground walnuts

  • 50 g of chopped walnuts

  • 5 Tablespoons of apricot jam

Preparation:
  1. Separate the egg whites from the yolks into two separate bowls. In another deep bowl, put margarine or butter and 1 vanilla sugar and mix the ingredients well. Then gradually add one egg yolk at a time and beat at the same time. After that, add half the flour and half the baking powder, beat with a wooden spoon, then add the rest of the flour again and beat the dough by hand.

  2. Put baking paper in an 18 x 28 cm baking tray, then spread the dough and level it with a spatula. Bake for 20 minutes at 180 °C.

  3. While the crust is baking, we make the second part.

  4. Beat 5 egg whites and add 200 g of sugar and 1 bag of vanilla sugar, when you get solid snow, add 150 g of ground walnuts and mix with a spatula. After 20 minutes, remove the crust from the oven and spread with 5 spoons of apricot jam. Put the whipped solid snow on top of it and level it with a spatula, and sprinkle 50 g of chopped walnuts on top of the egg whites, and return to the oven to bake for another 20 minutes. When it's done, leave the cake to cool and cut it into bars. To serve.
