Marinated Pork Ribs with Potatoes

  • An excellent choice for a Sunday lunch for the whole family. It is prepared quickly and easily and in a very simple way. Ribs with the addition of potatoes and vegetables and phenomenal spices. The ribs are soaked in the marinade for about 2 hours, and you can do it overnight, because that way they will absorb the flavors of the marinade better, and the meat will be juicier. Ingredients: simple, standing time: 2h , total time: 1 h and 50 min., 4 servings
  • 600 g of fleshy pork ribs

  • 1/2 kg of potatoes/ cut into rings

  • 2 larger carrots/cut into rings

  • 1 medium onion/ slices

  • 3 large cloves of garlic/ half

  • 80 ml of oil

  • 80 ml of white wine

  • 2 teaspoons of dry herbal spice

  • 1 teaspoon ground pepper

  • 1 teaspoon turmeric


  • 1 Tablespoon mustard

  • 1 teaspoon ground cumin

  • 1 Tablespoon honey

  • 2 teaspoons chili sauce

  • 1/2 teaspoon ground pepper

  • 2 teaspoons of dry herbal spice

  • 80 ml soy sauce

  1. Cut the pork ribs into pieces, as desired.

  2. In a small bowl, combine all the ingredients for the marinade.

  3. Coat each piece of meat with marinade, well.

  4. Arrange the marinated meat in a suitable bowl, pour over the rest of the marinade, cover and leave in the fridge for at least 2 hours.

  5. Cut the potatoes into circles, as well as the carrot.

  6. Cut the onion into slices, and cut the garlic in half. Put sliced ​​potatoes, carrots, onions, and garlic in a deeper bowl.

  7. Sprinkle with dry herbal spices, pepper, and turmeric. Stir well.

  8. Take 3 smaller, earthenware pots (in the absence of earthenware pots, use a suitable tray).

  9. Arrange the sliced ​​vegetables in earthenware pots, pour oil and white wine over them. Arrange the meat on top.

  10. Cover with aluminum foil and place in a cold oven.

  11. Turn the oven to 200 °C.

  12. When the liquid in the food boils, reduce the temperature to 190 °C and simmer the food for the next 1 hour.

  13. Then, carefully remove the dishes from the oven, remove the aluminum foil and return to the oven to bake the meat another 20-30 min.

  14. When the vegetables and the ribs are well cooked, take them out of the oven and serve them warm. Serve with salad. Buon appetito!
