## Quick and Easy Rice with Carrots: A Delicious and Diet-Friendly Meal
Rice with carrots is a simple and light meal that tastes great and can be combined with many dishes. The recipe is economical, quick, and easy, ideal for those on a Diet. Follow recipe.
Ingredients: simple, total time: 30 min. 4 serving
3 Tbsp Olive oil
1 small onion/ finely chopped
1 cup- 240 ml washed rice
1 big carrot/ chopped in blender
water 720 ml water
1 tsp dry bio spice Vegeta
salt and pepper to taste
1 tsp parsley leaves/ finely chopped
Preparation:
Finely chop the onion and set aside.
Peel the larger carrot and cut it into rings, then place it in a super chopper and chop very finely.
Rinse the rice well under cold water and let it sit in a colander.
Pour olive oil into a small saucepan and heat over low-medium heat.
Add the chopped onion and sauté until soft and translucent.
Add the blended carrot and simmer for about 5 minutes with occasional stirring.
Immediately after that, add the well-drained rice and stir over low heat for about 2 minutes.
Now add half the amount of water and let the rice absorb the liquid, stir.
Then add the rest of the water again. In the meantime, add spices, salt and pepper to taste.
Cook over low-medium heat for about 15 minutes, without stirring.
Finally, add chopped parsley to taste.
Turn off the heat.
