One of my simplest and most delightful recipes is yellow rice with turmeric or saffron, which not only boasts a vibrant color but is also incredibly healthy and bursting with flavor. This dish pairs fantastically with a variety of proteins, including both meat and fish, making it a versatile addition to any meal. To prepare this delightful yellow rice, you will need just a few basic ingredients: long-grain rice, either turmeric or saffron, some vegetable or chicken broth for added flavor, and a pinch of salt to taste. The cooking process involves sautéing the rice briefly to enhance its nuttiness before adding the broth and the chosen spice. If you opt for turmeric, you'll notice how it infuses the rice with a rich, golden color, while saffron will lend a more delicate, floral note to the dish.As the rice cooks, the aromas of the spices will fill your kitchen, creating an inviting atmosphere. Once the rice is tender and fluffy, you can fluff it with a fork and serve it alongside grilled chicken, roasted vegetables, or a succulent piece of fish.

Ingredients: simple, total time: 40 min., 4 serving
4 Tbsp Olive oil EVO
1 small onion/ finely chopped
2 small carrots / diced or cut into rings
2 Tbsp celery stalk/ finely chopped - optional
2 cloves of garlic/ minced
1 cup of Carnaroli rice/ 200 ml washed few times
salt and pepper to taste
1 tsp dry spice Vegeta
1 tsp turmeric/ or saffron small sachet 0.125 g
3 cup of water/ total 600 ml
Preparation:
First, prepare all the ingredients as described above.
Wash the rice under running cold water several times until the white liquid comes out.
Finely chop the onion and celery, and cut the carrots into smaller cubes or thin rings.
Pour olive oil to a small pot and heat it over low, moderate heat.
When the oil is heated, add the chopped onion and sauté until it softens and becomes transparent, stirring occasionally.
Now add the chopped carrots, Vegeta bio dry seasoning, a little salt and pepper to taste and mix it all well, simmer for about 8–10 minutes on a low, moderate heat.
After the specified time, add the chopped garlic and celery, as soon as the garlic smells, add the washed rice and fry for about 2–3 minutes, stirring occasionally.
Add water 3 times in 200 ml increments every 10 minutes.
After the third and final addition of water, reduce the heat, add turmeric or saffron and continue cooking for another 14 minutes. Do not stir!
Towards the end, add chopped parsley.
Put out the fire.
Serve the rice with a main course such as steaks or fish of your choice.

NOTE:
To avoid the bitterness of turmeric, you can add a little sugar or 1/4 teaspoon of powdered ginger to the tip of the knife.
Do not reheat the rice, but take it out 2 hours before consumption.
Keep in the refrigerator, covered, for 2 days.
