Chinese Chicken with Bamboo and Cashews
Delicious and wonderful chicken in my own way, in fact I like to eat it like this the most, especially if I'm on a light or diet, Chinese cuisine is always present. It is prepared very quickly and is very simple and the most delicious! Follow recipe.

Ingredients: simple, total time 25 min., 3 serving
Olive oil EVO to taste
1 shallot/ finely chopped
1 clove of garlic/ minced
400 g chicken breast
2 handful Cashews
1 can of bamboo/ sliced or julienne
salt and pepper to taste
as you like 1 green bell pepper/ diced - optional
100 ml of water
Sauce:
2 Tbsp vegetable oil
1 Tbsp Mirin sauce
2 Tbsp Oyster sauce
1 Tbsp white wine
1 Tbsp cornstarch
1. 5 Tbsp light soy sauce
and:

Preparation:
Cut the chicken breast into 2 cm thick cutlets, then cut them into equal cubes.
Strain the bamboo and cut into julienne or thin slices.
If you use pepper, this is an optional variant, clean it of seeds and stems and cut it into smaller cubes. This may work for you if you can't find bamboo in the store.
Finely chop the shallot and garlic.
Make the sauce mixture first. In a small bowl, mix the starch and soy sauce without lumps, add the remaining ingredients for the sauce and mix once more.
Pour 2 spoons of this sauce over the cut chicken and mix, let it sit in the fridge for about 10–15 minutes.
Fry the shallot and garlic in a steel pan about a minute to moderate heat.
Add the chicken, bamboo and chopped bell pepper and fry about 2-3 minute, until golden brown and changing color.
Finally, add the rest of the sauce and water and cook for about 2–3 minutes until the sauce thickens.
Add the cashews at the end, mix well and turn off the heat.

NOTE:
Instead of wine, you can use vegetable broth
Instead of chicken breast, you can use chicken thigh or tenderloin.
Do not use a darker soy sauce because the flavor will be very strong.
Keep the rest of the food in the refrigerator for up to 2–3 days.
