## Discover the Irresistible Tuscan Fried Chicken Bites

  • Delightfully tender Tuscan chicken bites offer a true culinary pleasure for the entire family. These bites are marinated to achieve their juicy and tender texture, then breaded and fried in hot oil. Thanks to this traditional marinade, cherished by Florentines, the chicken bites do not absorb excess oil. The preparation is both quick and straightforward, though it is essential to allow the chicken to marinate in the refrigerator for one hour. Prior to beginning, please refer to the NOTE in the lower section of the text. Enjoy following this exceptional recipe.

Tuscan Fried Chicken Bites 
Ingredients: simple, total time: 1h 20 min. 2 serving
  • 500 g chicken meat/ breast, thighs, drumsticks

  • 200 ml oil for frying

For marinade:

  • 3 Tbsp parsley dry leaves/ or fresh finely chopped

  • 5 Tbsp extra virgin olive oil EVO

  • 1 lemon juice filtered

  • 1/2 tsp salt

  • black pepper to taste

For Tuscan fried chicken meat:

  • 2 big eggs

  • 2 Tbsp flour

Preparation:
  1. Chopped parsley, put in bowl with chicken meat cut into pieces, add salt, black pepper, olive oil and lemon juice and mix well.

  2. Cover with transparent foil and let it rest for 1–2 hours in the marinade.

  3. After the time has passed, heat plenty of oil in a large saucepan over medium heat.

  4. While the oil is heating, beat the eggs in a deep plate, add flour in another plate.

  5. Roll the chicken pieces well in flour then in eggs, drain them well.

  6. Chicken pieces add to the hot oil, fry until golden brown from all sides (5–6 minutes each side).

  7. With the help of a slotted spoon, take it out on a kitchen towel to absorb excess fat.

  8. Serve warm with some sauce mayonnaise or ketchup with french fries or salad.

NOTE:
  • Do not throw away the rest of the marinade if you want to make it again for tomorrow.

  • If you want, you can add 1/2 tsp garlic powder to the marinade for a more intense taste.

  • If there are more of you, for example four, you will need 1 kg of chicken meat, and just double the quantities.

  • If you have eggs left over from the breading, remove the oil from frying, add a little oil and fry an omelette. That's what I did. Throw away the old oil!

  • Keep the rest of the chicken bites covered in the refrigerator until tomorrow.
