Carrot Patties

  • Delicious vegan carrot patties that are quick and easy to prepare, very tasty and ideal for those on a diet. The recipe is economical and can be served as a main course instead of meat or as a side dish. Follow recipe.

Ingredients: simple, total time: 50 min. 3-4 serving
  • 600 g carrots/ grated

  • 130 g breadcrumbs

  • 70 g grated Parmesan cheese

  • 2 big eggs

  • 1 small onion/ finely chopped or half medium onion

  • salt and black pepper to taste

  • Olive oil EVO to taste

Preparation:
  1. Clean the carrots, peel them and chop them in a blender.

  2. Now transfer them to a bowl.

  3. Finely chop the onion and add to the carrots, add the eggs, breadcrumbs, salt and Parmesan.

  4. Mix everything together until you get a smooth dough.

  5. Once you have a uniform mixture, shape a few balls, flatten them and place them on a baking sheet lined with baking paper.

  6. Bake in a preheated oven at 180°C for about 20 minutes.

  7. Remove from the oven and drizzle with a little olive oil, continue baking for another 10–15 minutes, until golden brown, and leave to cool.

  8. Serve!

NOTE:
  • If you like it spicy, you can add half a teaspoon of chili powder. You can leave the mixture of these vegetables covered in the refrigerator for up to 2 days, if you don't want to roast them all at once.
