Corn Bread with Cheese

  • Proja is an old Serbian-traditional dish made from corn, coarsely ground flour, salt, and water. Today, there are various types to make our taste as good as possible, you can eat with cheese, ajvar, paprika. This type of proja is called "projanica". It is served for breakfast, dinner or as an appetizer, usually with yogurt or sour milk. Follow recipe.

Ingredients: cup 200 ml, easy, total time: 40 min., 8 servings
  • 5 cups cornflour

  • 2 cups white flour

  • 4 cups milk

  • 3 cups oil

  • 300 g fine cheese or 500 g

  • 3 eggs

  • 1/2 bag of baking powder/5 g

  • 2 teaspoons of salt

  • Bake at 200 °C for 25 minutes

Preparation:
  1. Mix all these ingredients in a deeper plastic bowl. Grease the baking tray well and pour the mass.

  2. Bake at 180 °C for 20–30 minutes, until it turns brown.

  3. Check the dough with a toothpick if it is ready.

2. RECIPE OF CORN BREAD WITH CHEESE
Ingredients:
  • 5 eggs

  • 1 cup yogurt

  • 1 cup of sour water

  • 1 cup of oil

  • 1 bag baking powder/ 10 g

  • 1 teaspoon of salt

  • 3 Tablespoons of plain flour

  • 12 Tablespoons of corn flour

  • 300 g of small cheese (more/less as you like)

  • sesame seeds for sprinkling

Preparation:
  1. Beat all the ingredients except the cheese with a mixer. Knead the cheese by hand only at the end. I use fresh small cow's cheese that is not very salty, so I only add a teaspoon of salt, so add salt according to how salty the cheese you use is. Grease the tray and pour the mixture, sprinkle with sesame seeds and bake for about 35–45 minutes at 200 °C. Enjoy in bites!

3. RECIPE OF CORN BREAD WITH CHEESE
Ingredients:
  • 6 eggs

  • 6 cups of milk

  • 3 cups of sunflower oil

  • 4.5 cups of white wheat flour

  • 5 cups of corn flour

  • 2.5 cups of corn grits (polenta)

  • 1.5 cups of yogurt

  • 3 Tablespoons (full) of cream

  • 600 g of small homemade cheese

  • 1.5 bags of baking powder/15 g

  • 1 teaspoon of salt

Preparation:
  1. Mix white flour, corn flour, polenta, baking powder and salt. Beat the eggs. Add milk, oil, yogurt, sour cream and dry ingredients mixed above. Mix everything gently with a mixer to combine. Knead the cheese lightly into the mixture with a whisk. Grease the tray and sprinkle with flour. The tray is a large 38 × 42 cm. Heat the oven to 200 °C. Put it in and when the crust starts to stick, reduce it to 180–170, it depends on the oven. Bake until nicely browned. Buon appetito!
