Rich Pasta Salad

  • A fantastic organic and healthy meal that takes just 20 minutes to make. It is pleasant in the summer heat and a light dish that fills you up, and you have taken in the most necessary vitamins during the day. If you want to prepare this wonderful and refreshing salad as a meal, follow the recipe.

Ingredients: simple, total time: 20 min. 2 servings

Pasta:

  • 200 g pasta/ macaroni or penne

  • water for pasta

  • 1 Tbsp EVO olive oil

  • 1 teaspoon sea salt

For Salad:

  • 1 can tuna/ filtered

  • 1 red onion/chop into ribs

  • 1 can boiled sweet corn/ 50 g

  • 1 cucumber/ washed with peel, diced

  • 1 red fresh bell pepper/ washed and diced without seeds

  • 1 green pepper/ washed and diced without seeds

  • 5 Olive/ black or green cut into rings

  • 2 Tablespoon Greek feta cheese/ diced

  • grated Parmesan cheese to taste

  • 1 Tablespoon fresh parsley leaves.

Topping:

  • 200 ml sour cream

  • 1 flat Tablespoon mayonnaise

  • 1/2 teaspoon mustard

  • 1 teaspoon garlic powder

  • 1 Tbsp Olive oil EVO

  • salt and pepper to taste

  • 1 teaspoon oregano/ or to taste

Preparation:
  1. Prepare all the ingredients as described above.

  2. Prepare a deep medium pot with water and 1 teaspoon sea salt, and olive oil, wait for it to boil.

  3. Add the pasta and cook according to the instructions until alla dente.

  4. Strain the pasta and let it cool in a colander.

For Salad:

  1. In a deep line, put the mashed filtered tuna and other vegetables on description, diced feta cheese, stir, add a little salt and pepper to taste, set aside.

Topping:

  1. In another small bowl, pour sour cream, mayonnaise, garlic powder, a little mustard, pinch of salt and pepper, oregano.

  2. Finally, add olive oil and mix well.

  3. Pour it all over the tuna and vegetables.

  4. Gently mix the ingredients.

  5. Then decorate with parsley leaves, olives.

  6. Sprinkle with grated Parmesan cheese, just enough to cover the top of the salad.

  7. Put the whole salad in a bowl to cool for about 30 minutes, then serve.

NOTE:

  • You can make this salad without tuna and Greek cheese.

  • You can certainly use sardines instead of tuna or mackerel.

  • Make sure you use shorter pasta.

  • Instead of green pepper, you can add arugula or matavilz salad.

  • When cooking pasta, do not overcook because it will be gooey

  • Keep the salad covered, in the refrigerator for up to 3 days!
