##Deliciously Soft Cheese Corn Bread Recipe

  • I frequently prepare cornbread, customizing it to suit my preferences by altering the ingredients. This delightful appetizer is perfect for breakfast and pairs excellently with sour milk or yogurt. If preferred, you can also use this dough to make muffins, which I find more convenient, as it yields the same taste and is easy to portion. In addition to being delicious, this recipe is economical, simple, and quick to prepare. Both children and the elderly will enjoy its soft and generous texture. Before starting, please read the NOTE at the bottom of the text section. Let's prepare it together by following the recipe.

Soft Cheese Corn Bread 
Ingredients: simple, total time:30 min., 12-14 portions
  • 300 g feta cheese

  • 6 g baking powder/ or 1/2 bag

  • 200 ml Greek yogurt

  • 170 ml oil

  • 1 full tsp of salt

  • 5 eggs

  • 250 g corn flour

  • 200 g flour 00

  • round mold 30-31 cm

Preparation:
  1. In a deep bowl, add eggs, salt, yogurt, and beat well, add grated cheese and oil and mix briefly on medium speed.

  2. Add corn flour (polenta), and gradually add mixed flour with baking powder.

  3. Mix all the ingredients well.

  4. Grease a 30-31 cm round dish with oil and add moistened baking paper.

  5. Pour the mixture evenly and level.

  6. Bake in a preheated oven at 200 °C for about 20–25 minutes.

  7. Check the dough with a toothpick if it is dry, it is done.

  8. Cover the finished cornbread with a clean cloth, let it rest for 15 minutes.

  9. Cut it into portions and serve it for breakfast or dinner, with spreads, ajvar or dry meaty ingredients. This appetizer is otherwise very healthy and ideal for morning meals.

NOTE:
  • If you want, you can also add dried meat products to this dough: diced bacon, or some hams and milk cream, Philadelphia cheese, or grated Gouda or Trappist cheese. You can add one diced red pepper to the vegetables with bacon.

  • If you are using a cheese that is not salty, add more salt.

  • If you don't have a pan of this size, you can bake in two smaller 20×30 cm pans.

  • Keep the cornbread in a dry place covered with a clean cloth.
