Fried soft Chicken cutlets

Ingredients: ssimple, total time: 30 min. 6-7 serving
  • 10 pieces thin chicken cutlets/about 700 g chicken breast

  • 2 tsp dry spice Vegeta

  • salt and black pepper to taste

  • Olive oil EVO for frying

  • 2 large eggs

  • 1 Tbsp Greek yogurt

  • 5-6 Tbsp flour

  • breadcrumbs to taste

  • 2 tsp dry parsley/ divided

  • 1 Tbsp grated Parmesan cheese/ optional

Preparation:
  1. Cut the chicken breast into thin steaks, then sprinkle with Vegeta, salt and pepper on both sides and place on a plate.

  2. In a deep plate, mix the eggs, 1 teaspoon of parsley, 1/4 teaspoon of salt, and yogurt. Combine all ingredients well. Set aside.

  3. Add flour to a shallow plate, set aside.

  4. In the third shallow plate, pour the crumbs, 1 tsp dry parsley and grated Parmesan as you like, mix well.

  5. Heat the oil in a large frying pan over moderate heat and at the same time bread the steaks.

  6. Roll the steaks first in flour, then in the egg mixture, drain them well, then roll them in crumbs 2–3 times on each side.

  7. Immediately arrange them in hot oil to fry for about 3–4 minutes on each side until golden brown, (if there is no room in the pan, put them on a clean plate) do not overcrowd them, wait until the first round is ready.

  8. Place the finished steaks on kitchen paper to absorb excess fat.

  9. Serve warm immediately with your favorite side dishes or salads.

NOTE:
  • You can add 1/2 teaspoon of ground red pepper to the egg mixture, as you like.

  • Cover the rest of the chicken steaks and store in the refrigerator, heat in the oven or pan.
