What is Cicvara and How is it Prepared?

  • Cicvara is a traditional and nutritious dish with deep roots in Serbian culinary heritage, though it has regrettably become somewhat overlooked. Authentic cicvara can still be enjoyed in traditional Serbian restaurants and in local cuisines found in the mountainous regions of Montenegro, as well as in Serbian areas such as Zlatibor, Tara, Soko Banja, and Durmitor. For those interested in preparing this classic dish, here is a recipe to guide you in recreating cicvara at home.

What is cicvara and how is it prepared?
Ingredients: simple, total time: 15 min.
  • 100 g corn flour

  • 200 g cream or cheese (cow)

  • 300 ml milk

  • 200 ml sour cream

  • 1 Tablespoon grease

  • salt to taste

Preparation:
  1. Place the milk in a deep bowl and warm it. Meanwhile, mash the cheese, add the fat and sour cream, and mix thoroughly.

  2. Season if the cheese lacks salt.

  3. Once the mixture begins to boil, gradually add the combination of cream cheese, cheese, and fat to the milk, stirring constantly.

  4. Thoroughly mix all the ingredients, and when the first bubbles appear, incorporate the corn flour.

  5. Continue stirring until the mixture thickens, then remove from heat.

  6. Serve chilled with sour milk or yogurt.

  • 200 ml of water

  • 1/2 teaspoon salt (if cheese or cream is salty, reduce the amount)

  • 1 teaspoon butter or fat

  • 100 g of old ripe cream

  • 100 g of old cheese

  • 4 Tablespoons corn flour

Preparation:
  1. Place water, butter, and salt on the stove and bring to a boil.

  2. Subsequently, incorporate the cream and cheese, stirring continuously until both are melted.

  3. Next, add the corn flour and reduce the heat, stirring constantly until the cicvara begins to separate from the pan. Continue cooking for a few more minutes, maintaining constant stirring.

3. Recipe Cicvara
Ingredients: simple, total time: 15 min.
  • 200 ml milk

  • 200 ml of water

  • 1 spoon of fat

  • 8 Tablespoons corn flour

  • 500 g of cheese

  • a little cream

  • teaspoon of salt

Preparation:
  1. Bring water, milk, and a tablespoon of fat to a boil.

  2. Incorporate the shredded cheese and add salt as necessary.

  3. Gradually pour corn flour into the boiling mixture, stirring continuously.

  4. Add additional salt if the cheese lacks saltiness.

  5. Cook for 10 minutes over low heat, stirring constantly.

  6. Finally, add the cream and serve while hot.
